Weekly, by your own staff

  • Wipe door seals and check they close cleanly along the full length.
  • Confirm the controller display matches an independent thermometer.
  • Keep airflow clear — never stack stock against the evaporator.
  • Log temperatures at the same time each day.

Quarterly, by a technician

  • Clean the condenser and evaporator coils.
  • Check refrigerant pressures, superheat and subcooling against design.
  • Test the defrost cycle end to end, including drain flow.
  • Inspect door heaters, hinges, closers and safety release.
  • Verify probe calibration and controller settings.
  • Record all readings so drift is visible over time.

Why it matters commercially

Documented temperature logs and service records are the evidence you need in a food-safety audit, and they are the fastest way to shorten diagnosis time on a future breakdown.
